1 x fresh, free range egg
1 x ripe avocado
3 x rashers of streaky of bacon
Pinch of salt and pepper
Chilli flakes to taste
Hot sauce optional, but delicious
Heat a saucepan of water with a splash of vinegar in it until it comes to the boil, turn it down to a simmer and crack in your egg. Cook for 2 mins. Remove from the water with a slotted spoon and place in a bowl of cold water, ready to use.
Slice your avocado in half, remove stone, peel, and carve a little out from the middle with a spoon, so your poached egg will fit in nicely.
Use the same slotted spoon to remove the egg from the cold water and place in one half of the avocado. add a tiny pinch of salt and pepper. Place the other half on top sealing in the egg.
Wrap the avocado tightly with the bacon, place in a pan on high heat and fry in a teaspoon of olive oil until the bacon is cooked all round.
Cut in half and watch the eggy goodness spill over the plate.
Sprinkle with chilli flakes or drizzle with hot sauce.
